Lotus Seeds??

I just bought some Lotus Seeds at the Asian market near my house.. I buy nuts there because they have a good deal, and these were in the vicinity, so I figured I'd try them out. Lo and behold, I google them and it turns out they have to be cooked.

Anybody got any Lotus Seed recipes they like/have tried?
