Vegan sugar cookies without egg replacer?

Do any of you have any vegan sugar cookie recipes that do not call for "egg replacer?" I don't have much money and I will really never use it again. Plus I really only have access to what is available at a small supermarket within walking distance of my house ( Read more... )

My roommate makes the best applesauce sugar cookies. They don't even taste appley.
I'll totally back up this idea.

My partner has made these before and they turned out really well. They aren't super-super sweet, so if you prefer them that way, add a tablespoon or more of sugar.

3 tablespoons extra firm silken tofu (MoriNu), mashed with a fork or pureed with blender/processor
1/2 cup (one stick) margarine
1 teaspoon vanilla
1/2 cup sugar
1 and 1/4 cup flour
1 teaspoon baking powder
1/4 teaspoon salt

Directions:

Cream margarine and sugar for about 5 minutes until fluffy.

Add mashed tofu and vanilla. Mix well.

Sift the flour, baking powder and salt into the mixture.

You can either roll out the dough and use cookie cutters or make cookie dough balls and flatten the dough with your hand onto an ungreased cookie sheet. You want the dough to be almost the thickness you want your cookie because these don't rise much.

Bake for around 10 minutes in 350 degree oven.

you can use applesauce as an egg replacer...i don't know the exact measurements but i'm sure you can look up how much applesauce = one egg online and find it easy enough =)

When a recipe calls for an egg replacer egg, and I don't have egg replacer, I mix two tablespoons of cornstarch with two tablespoons of applesauce, per egg, and this works really well for me.

Tapioca and arrowroot powder work, too.

Corn starch works great as an egg replacer! That's what I use in pumpkin pie to keep everything thick and together.
