As it's Father's Day coming up (in Australia) I was looking to cook my Dad a nice treat. Possibly a fairly plain cake, slice or some biscuits, but other suggestions are most welcome

I love using agave nectar and it is a slower form of sugar so its good for diabetics.
It can usually be used as a substitute in most recipes. Just make sure you use less of the agave because its liquid. (about 25% less)
Its my main sweetener in my cooking and it hasn't let me down yet. The only problem is if a recipes calls for a LOT of sugar, it can be tricky to get the proportion right.
Ah, I was thinking you would have to use less liquid. I guess I'm kind of new to the whole agave thing, so thanks for the tip. :)
Hmm. Would you be able to help me out with a recipe? Even if I don't choose to make this for Dad, I'd like to make the Easy Vegan Chocolate Cake (from vegweb) and sub the sugar for agave, but there seems to be a ton of liquid in the recipe. http://vegweb.com/index.php?topic=6433.0
wow that is a tough one. I would suggest reducing the oil to 1/2 a cup - use 1 cup agave nectar, after you have it all mixed make sure to taste it and see if the consistency is close to what you want, and adjust as necessary.
also, if you wanted something that wasn't a cake - I have a recipe for a chocolate pudding made with avocados, cocoa and dates. If you're interested let me know and I'll post it for you.

As far as I know dad wants a cake, but I would absolutely love it if you posted the recipe so I can use it for another time. I adore avocados and dates so I'd be really interested to see what a pudding with them in it would taste like. :D
