I wish I had advice to give from experience, but I haven't tried making vegan cookies without ener-g :/ One thing I would consider using is tahini. Even if the tahini flavour comes through, I've had tahini cookies which were actually quite tasty! So it wouldn't be a total loss.

Good luck, I'm sure someone else here has better advice.

i adore the chocolate-tahini combination thanks to Celine, but i know the tahini would be noticable; i'm trying to recreate the perfect basic cookie. thanks for mentioning that though, i can make some for me that way :)

Sounds like you two have really sensitive taste buds. You can try the flax egg method where you soak the seeds in water then strain the seeds and you're left with a weird googey clear substance like egg whites.
I think there's another egg replacer where you add more baking powder and a bit of liquid.
As for your yogurt - the brand you use is really important. If you use silk it would be too thin. Try Whole Soy or Soy Delicious, or other brands, like the coconut one. (But stay away from the rice one. It's terrible!)

FYI - I've had no problem with these using egg replacer.

A few days ago I made cookies using melted coconut milk ice cream for the eggs. It added a nice flavor.

maybe i should just use Ener-G. your flax seed method sounds interesting, i may have to try that.I did use Silk yogurt, so that could be what was wrong. When you used the melted coconut milk ice cream, was the taste of coconut noticeable? i LOVE coconut but my husband, not so much. I've been on a mission to make him the perfect vegan chocolate chip cookie for a long time, and i'd kind of forgotten about it until Supercarrot posted this :)

The coconut wasn't as noticeable as something else in the ice cream that I didn't like the taste of when melted, but it was subtle. I will try using a soy flavor next time. I like that the ice cream has those binders in them.

If you don't want to buy ener-g, there are recipes on the web that tell you how to make it.

I used the toll house recipe with ener-g and it worked out well. (I sprinkled the salt on top instead of in the recipe.)

thanks for all the recommendations. i'll be trying again, and hopefully WOWing my husband. He thinks it's funny at this point, because i've been able to win him over with tofu (which he was stubbornly opposed to)

I haven't made that particular recipe, but when I make chocolate chip cookies I use applesauce instead of egg- have you tried that?

Really, Ener-G works best in chocolate chip cookies, in my pretty extensive vegan-chocolate-chip-cookie-baking-experience. One big box of it will last you awhile, and you can order it from Cosmo's. I've used applesauce, bananas, flax, yogurt, soymilk powder, etc etc etc, and nothing makes them come out just right except for egg replacer.. for me, anyway.
