An Excellent Black Bean Salad Recipe

I recently made this black bean salad, which was posted about a year ago, for dinner. I skipped the onion, but other than that, made no changes. It was amazing--do yourselves a favor, people, and try it! I served it with quinoa. My omni roomie just gobbled it up.

This looks great! I've made a similar salad with sour "cream" instead of olive oil, and without the spices listed above (just salt and pepper). Mine calls for a lot more cilantro and lime juice, and white onion instead of red. You can eat it with tortilla chips; my whole family loved it and requests that I make it whenever I visit! I might try this version next time...

wow that looks so good! i'm gonna try it :)...i might skip the hot pepper sauce though, i get ol' lady heartburn.
