Very Easy Avocado Soup (Caribbean)

I got this from The World In Your Kitchen, by Troth Wells. I changed the recipe slightly to make it vegan, but it turned out delicious- two people manged to eat the whole batch with bread for dinner. ;)

Sounds a bit odd but we liked it a lot.  As this is not a hot soup it's good for summer.

Avocado Soup

I <3 cold soups so much in the summer!

You can make this recipe totally raw (if anyone's interested) by replacing the milk with cucumber juice. I'd add a little garlic and garnish with chopped tomatoes (not the salmonella kind!) & cilantro. Very refreshing.

Ooh this sounds great and a good base for a mexican themed meal with nachos and the above suggestion of the chopped toms on top too :) So trying this out!!

I think I have to make this.
Not only does it sound quite yummy, but I've got three (fortuitous, no?) extremely ripe avocados sitting in a fruit basket, just waiting for me to use them before they have to be tossed...
