i thought i'd give an update about the veganized whipped cream. i didn't get many responses to my post, so i went rummaging around the internet and found a recipe on vegweb that
phineasjones and i modified for impressive results. it's not healthy, but it's delicious and it's really convincing both in taste and texture.
*3/4 cup soy milk
*1/2 cup soy milk powder (i used "better than milk")
*2 TBSP confectioner's sugar
*2 tsp vanilla extract
*2 TBSP corn syrup
*1/2 cup canola oil
*1 TBSP lemon juice
Blend together soy milk, milk powder, confectioner's sugar, vanilla and corn syrup.
Let sit in the fridge for 10 minutes to fully dissolve.
Blending on high, slowly drizzle in oil then lemon juice.
Enjoy!
**the order of the ingredients is really important, for some reason. we tried to modify it the first time we made it and it went from a nice, firm, whipped cream texture, to a heavy cream, liquidy texture when we added more milk powder at the end.
