Last night for some reason I decided to try and make some pea soup. Now, I've only eaten pea soup once in my life when I was a kid, and I've certainly never made it before, so there was plenty of chance for disaster.
Much to my surprise the soup was AWESOME. Thick, hearty and delicious, and my roommates and I ate the whole potful last night.
Here's an approximation of my recipe...
1 med onion
4 cloves garlic
4-6 bay leaves
1 - 2 carrots
1 potato
2 cups yellow split peas
6-8 cups vegetable broth
salt and pepper
2 tsp rosemary
1 tsp basil
1/2 tsp oregano
1 tsp liquid smoke
First I put a little olive oil in my soup pot and cooked the onions and garlic. When they were starting to turn translucent I added the bay leaves, potatoes, carrots, and the remainder of the herbs. I cooked those for a couple more minutes before adding the rest of the ingredients. I let the soup come to a boil, covered it and reduced the heat and let it cook for a good 45 mins to an hour until everything was soft. When it was time to eat I removed the bay leaves and mashed everything up with a potato masher until it was the consistency I wanted. The soup was delicious and left my whole house smelling amazing.
