Minimal-Ingredient Meatloaf?

Is it possible to make a meatloaf with no nuts and no breadcrumbs?  Every recipe I've seen in the memories seems to call for some kind of ground nut, which i don't have access to right now.  I do have ( Read more... )

While I haven't tried it, I don't see why nuts or breadcrumbs should be essential. I have often substituted oats for breadcrumbs, and I'm guessing the nuts would mainly be a flavour/healthy fats thing, so as long as you put in other flavourings I don't think it would be a huge deal. I think it would be different, but not bad.

sounds like you have enough for meatloaf to me :)

nuts arent required... theyre just fun. oats are a good breadcrumb substitute. or crushed crackers?

if you have any veggies for filler, throw them in too to make it pretty.

ps: when i used the meatloaf generator i omitted and substituted and it was just fine. (i had no breadcrumbs and used matzoh farfel, and there was something else i omitted.) it's just a guide.

i think i may just end up using that generator and omit some stuff. i was thinking of doing it with a bisquick crust poured on top, too. think i'll check out a cobbler recipe for inspiration on that.

if it fails, i'll just cover it in gravy! gravy makes everything delicious, right?

if you have any nut butter or tahini, that might be a good sub.

it might be good to have some sort of nut product to provide some fats so the loaf isn't as dry. or do you have an avocado? that might work.

i have almond butter! i almost forgot. i'll throw some of that in there to moisten it up. oh lordie this is going to be an interesting loaf.
