Zucchini-Banana Bread

Recently I posted here with a plea for recipes for zucchini bread/cake (and then proceeded to not respond to any of the comments just because I'm a jerk.) Anyway I tried most of the recipes and ideas that were offered and also ended up compiling the things I liked from different recipes into one zucchini bread...actually that had less to do with creativity than it did with a lack of the right ingredients.

You might have to adjust the baking time and temperature just because my oven is very unpredictable so I'm not sure how this would work in an oven that actually...works.

Anyway, recipe:

Zucchini-Banana Bread
Ingredients

2 cups unbleached all purpose flour
2 1/2 cups whole wheat flour
1 1/2 tsp. salt
1 1/2 tsp. baking soda
1 1/2 tsp. baking powder
2 Tbsp. cinnamon

2 1/2 Tbsp. ground flax mixed with 1/2 cup plus 1 Tbsp water
2 large bananas, mashed
1.5 cups sugar
1 Tbsp. plus 1 1/2 tsp. vanilla extract

3.5 cups shredded zucchini
1 1/4 cups raisins

Directions
Preheat oven to 350 degrees Fahrenheit and spray two loaf pans with non-stick spray. Mix the first six ingredients in a medium sized mixing bowl.

Mix the flax mixture, bananas, sugar, and vanilla extract in a large bowl. Add the zucchini and raisins and stir until incorporated.

In two batches, mix the dry ingredients into the wet. You might need to add some water, depending on how much moisture there is from the zucchini. Transfer batter to loaf pans and bake for about 50 minutes.
