I looked into hand-crank machines and you can get attachments that will make sheets of dough for pastries and such.
Not sure if you can do rice noodles with those sorts of machines, but since you can make several kinds without eggs (such as mung bean starch instead), it might be worth looking into.
pasta is the obvious answer, but be sure you find 00 Semolina flour. co-ops, natural food stores, and gourmet shops carry them, long wiht a million other speciality and well-stocked shops. Also: wonton and dumpling wrappers!
