Cardamom Cashew Butter Cupcakes Query

I finally caved in and purchased the book VCTOTW. Question for you 'experts'... the icing recipe for the cashew butter frosting [p. 129] calls for soy milk powder. The only one I found in my health food store was the 'Better Than Milk' soy milk beverage powder. Although the icing tastes wonderful, the powder made it a bit gritty. better than milk is the brand isa uses. :-/ she must be doing something wonderful, cause my fauxstess filling was gritty too. maybe super duper creaming/whipping?

i even use the original (non-low fat) and it's still not up to par. aah well. i was never a fan of better than milk, so that might be why i'm so critical.

You know, I made that frosting today, and used a little bit of powdered sugar instead of soymilk powder (I don't eat soy) and it was delicious. In fact, I just ate another cupcake. Also, I used almond butter instead of cashew, but that probably doesn't make any difference.

Thank you. I was thinking about powdered sugar instead. I will definitely ditch the soy milk powder next time.

That recipe sounds awesome! What does 'VCTOTW' stand for? I don't have many vegan cookbooks... might have to see if I can find that one locally!
