ahah! I tried to make a vegan black forest cake a few months ago. I second what rokeon said about the separate ingredient list. generally the cake is frosted with some of the sweetened whipping cream, as well as spread between the layers. though I'm pretty sure the recipe got split at the wrong place, and the oil belongs in the upper ingredients.
ener-g (is that the name? I can't remember now either!) is a good egg replacer in baked goods. I like to use a combination of 1 1/2 tablespoons flour mixed with 1 tsp oil, 1/2 tsp baking powder and 2 tablespoons water (per egg).
as for the whipping cream-- in my opinion, there's really no recipe that rivals the real thing. a lot of the tofu based recipes *do* have a distinct soy flavor, despite loads of vanilla. and the nut based recipes, as weizenwind said, have a dense texture. when I attempted a black forest cake, I abandoned the idea of whipped cream together, and made a chocolate (tofu based) mousse, rich enough that the chocolate overpowered the tofu flavor. plus it's fluffy.
