Help with box brownies.

Mar 18, 2007 10:33

I have these boxes of brownie mix. They're not "vegan brownies," the mix just happens to be vegan. The directions call for 1/2 cup vegetable oil, 1/4 cup of water, and two eggs. When I've made them in the past, I've substituted 1/2 banana for each egg. So I used a whole banana. Usually when I make them, I follow the rest of the instructions exactly but they turn out waayy too greasy that way. You get oil on your fingers every time you touch them. Which is fine with me, because they still taste delicious, but I'm going to be feeding other people this time. I tried to put less oil in once, but the brownies came out really rubbery and pretty much inedible.

Any ideas on how to fix up the recipe so that they're tasty but not dripping grease? I don't have any egg replacer. Any other ideas for an egg substitute would have to be just as cheap as bananas. Any other ingreients would also have to be pretty cheap. I only have about $5 to work with.

Thanks!
