My corn, potato, and collard greens chowder. Besides the ingredients in the name, the ingredients used were red bell peppers, celery, green onions, shallots, parsley, vegetable broth, soymilk, chipotle pepper, smoked paprika, Old Bay seasoning, and black pepper. Also works great with leeks instead of collards. :D
Very easy to make. Just sautee some bell pepper, celery, and shallots in oil or margarine until softened. Then add a sprinkle of flour and stir, cooking for a minute or two (this will thicken the soup). This is also a good time to add whatever seasonings you like - Old Bay works well, as do any sort of creole or southwestern seasoning blends. Stir in soymilk and vegetable broth. Add potatoes and collards, cook !
until potatoes are fork-tender. Turn off heat, stir in chopped parsley and green onions. Reseason to taste. Eat. :D
