Savanola Rice & Red beans

What do you get when you mix Savannah rice and dirty rice? Savanola rice! (Get it? SAVAnnah & New OrLeAns. I'm really witty, you know. That's something about me that makes me just that much more likable. Yup.) It's like a chair but, you know, not.Ingredients:
  • 1 med Vidalia onion, chopped
  • ½ each large red and green bell pepper, chopped
  • 1 stalk celery, chopped (I sometimes leave this out)
  • 2 or 3 cloves of garlic, pressed
  • ½-¾ bag of soy crumbles
  • 1 can red beans
  • 1 cup white long grain rice
  • 2 cups water
  • 1 6oz can tomato paste
  • 2± tsp hot sauce
  • drop or two of liquid smoke (I didn't do this but it just occurred to me that it would be good)
  • salt and pepper to taste
Directions:
  1. Sauté onion, bell pepper and garlic
  2. Add crumbles and continue to cook until browned
  3. Add rice and tomato paste and briefly mix until combined and heated
  4. Add water, beans, smoke and hot sauce, bring to a boil, cover, let simmer for about 20 minutes
