strawberry 'splosion muffins

thanks to
halfwitted's strawberry excess and
kejlina's inspiration, i made strawberry surprise muffins today, they are sooooooooo gooey inside and tastey!  it's like an explosion of strawberry with a fluffy muffin case topped with crunchy streusel!!

2 cups flour (mixture of whole wheat and white)
1/2 cup grainy sugar
1/2 tsp salt
3 tsp baking powder
1/4 cup margarine
1 tbsp oil
1 mashed banana
2 tsp egg replacer + 3 tbsp water
1/2 cup soy milk
12 large strawberries, halved

oven at 350F, makes 12 muffins


  1. sift together the flour, salt and baking powder

  2. whip the earth balance with the oil, add grainy sugar, mashed banana, egg replacer, and soy milk

  3. stir dry ingredients into wet and stir until just mixed

  4. spoon 3/4 tbsp of dough into each muffin spot making sure the dough covers the entire bottom, press half a strawberry into the middle

  5. top the muffins with another layer of dough (about a tbsp)

  6. top with another half of strawberry (press firmly)

  7. sprinkle streusel topping on top

  8. bake for about 15 minutes, or until tops are golden coloured and fork comes out clean



kejlina's streusel topping:
3 tbsp flour
3 tbsp grainy sugar
2 tbsp margarine
cinnamon
- use 2 knives or a pastry cutter until crumbly and use to heart's desire.

they were good just out of the oven, but even better cooled!  i used frozen strawberries (which turned out pretty gooey... so using a baking sheet under the muffin tin might be a good idea).
