Lazy lunches

  • 2 slices whole wheat
  • Nayonaise (hummus is good too)
  • carrot strips/shreds
  • romaine
  • half an eggplant - sliced thinly, drizzled with olive oil, oven roasted till brown
    (I put them in my oven toaster for 7 minutes)
    Then chilled it in the fridge and ate it in school. Yum.
    btw: I'm seriously eggplant-obsessed.




  • quinoa (cooked with water till it turns translucent and the 'tails' appear)
  • baby asparagus
  • carrot
  • white chinese cabbage
    I stir-fried these in a small pan with olive oil, salt and pepper, then threw them on top of a bed of romaine lettuce. Quinoa is really fantastic, perks me right up when I'm feeling sleepy.






  • ripe strawberries
  • soy milk
  • raw sugar to taste
    I have yet to master the fine art of making sorbets/ice cream (ok, I'm just too lazy to keep checking and stirring) so I simply blended the above together, put it in an ice cream tub and froze it. When frozen, I took it out and let it melt a bit, then stirred it into slush. Haha very appetizing, i know! But it tastes good. Perfect for reading in the garden on a hot day.
