Vegan mud cake?

I'm trying to veganise this recipeI think I'm okay with the actual cake - I'll use soy buttermilk and the flour-oil-baking-powder-water egg substitute (fingers crossed it'll work in huge quantities like that, if you've got a better suggestion let me know) but I really have no idea how to make the icing. I don't think you can buy soy cream in ( Read more... )

You can buy soy cream in Australia, but it's hard to find unless you buy it from the Cruelty Free Shop (look for it under "Sweet" in the "Food" section)

You could try using soft tofu... with all that chocolate you might not even taste it, haha! You might want to just use a different icing recipe, though... or use soymilk instead, use less and add some margarine to help with firming. I think if you just replaced the cream with soymilk it would be too runny (but maybe not, with all that choc to harden it!)

btw, when you're replacing the eggs, you might want to use soft or silken tofu. Using so much egg replacer might not work, and the cake is supposed to be moist, being a mudcake. I think the ratio is 1/4 cup tofu per egg... and maybe some baking powder or soda but I'm not sure. :)

Ooh, I'll have to look out for the soy cream! Somehow I don't think my parents will be too happy about buying it online, though...

And yeah, I think I might go with the soy milk/margarine in the icing and tofu instead of eggs. Thank you! :)

You can order from the Cruelty Free Shop using a Money Order, if that helps. :)

One thing you can do is e-mail the companies/importers that sell these products within Australia and ask them for a list of shops that stock it in your location. They should already have the info handy, so it's just a matter of passing it onto you.

The easiest to find might be the Blue Lotus brand. Their URL is http://www.bluelotusfoods.com.au/

That "Soia & Soia" soy cream is put out by a brand called Probios, which is imported by these people:

And they list stockists! But if you need further info, just e-mail them.
