My flatmate,
cr4k, bought a leek and didn't know what to do with it!
So we made soup.
The obvious thing to do would be leek and potato, but I'm in love with sweet potatoes (they're nutritious and gorgeous and release energy slowly too, so are the ultimate food in my book!).
Anyway, it was lush and really easy to do, so here's the recipe.
Ingredients
1 large leek (chopped)
2 sweet potatoes (they were fairly small; peeled and diced)
1 stick of celery (chopped)
1 carrot (peeled and chopped)
2 heaped tsp stock powder
sprinkling of sage
squidge of garlic puree
pepper
1)Stick the kettle on, and prepare the veggies (peel, chop etc).
2)Add all the veggies, sage, garlic puree and stock powder to the pan.
3)Cover everything in water from the kettle, once it's boiled.
4)Bring to the boil, then continue to simmer for about 20 minutes, until everything's cooked.
5) liquidise most of it up, but leave a few chunky bits for texture, and season to taste.
It was so, so yummy :)
