Rice Pudding

Orange-Chocolate Rice Pudding











Boil about 2 cups of soymilk

Add about 1/2 cup of rice, and turn the heat to low. Stir constantly until the milk has been absorbed and it becomes thick. Keep watch on the pot so it doesn't boil over.

When it's all absorbed, turn off the heat of the stove and preheat the oven to 320F

Add about a tbsp of sweetener (sugar syrup, maple syrup, etc, whichever you prefer), a few drops of vanilla extract, raisins/dried fruit if you want (I didn't have any so I didn't put it in mine), and about 1/2 cup of orange juice. You may add orange zest if you wish. I also added some chocolate sprinkles/shavings, you can add as much as you'd like.

Pour the rice mixture into a baking dish, and bake for about 15 min.

When it's done, take it out and stir.

Enjoy hot or cold.
