Avocado Chapatis and Lentil Pate

I made a pretty lovely supper! So I thought I'd post.

People wonder how to use up avocado's..



... and here is a very tasty way! make chapatis! I was nervous these wouldn't come out well, but they are very good. Especially when you don't over cook them - but if you do over cook 'em, then you have some tasty cracker type things.

here is the recipe: chapatis!

instead of chili, i added dried coriander.

this blog has a bunch of tasty looking food, not all vegan, but very adaptable. this is the first thing i've made from it. sometime i will try more.

And Lentil Pate! I made this up as a went along, and it came out very well, and not unlike the one served at Real Food Daily.



It went something like this:

1 small onion, chopped
5-6 ounces of mushrooms, chopped
half a poblano pepper, chopped
1 15oz can of lentils
large handful of walnuts, toasted on a dry skillet
1/8 - 1/4 cup (or so) of Nutritional yeast
Mirin
Tamari
Ume Plum Vinegar
Thyme
Dill
Salt and Pepper to taste

First, saute the onions in some olive oil, sprinkled with salt, over medium heat til they are soft. Add the mushrooms and peppers, and saute for a few minutes. Then add a large splash of mirin, to make the pan liquidy, a few splashes of tamari, and small splashes of the vinegar. Cover with a lid and let bubble for five minutes.

After five minutes, give the mixture a stir, and add the thyme (a good pinch), and a few shakes of dill, and salt and pepper. i went light on the herbs, but just enough to make it fragrant. Let saute for another five minutes or so.

In a Food Processor, add the lentils, and pulse them til they are mushed up a bit. Add the mushroom/pepper/onion mixture, and process til well mixed, but not smooth. Then add the walnuts, and the nutritional yeast, and process til well mixed and near smooth (i like abit of texture, but it was pretty smooth).

Done! I let mine rest while I made the chapatis, to let the flavor come together.
