This was made for the
vegan_cookoffPeople were scared of this cake but kept coming back for seconds after trying it.
Lentil Spice Cake
1 cup red lentils
2 1/2 cups water
1 1/2 tsp. ground ginger
1 tsp. All Spice
pinch cayanne pepper
1 cup of the above cooked lentils
1 tsp. vanilla
1 cup apple juice
3/4 cup sugar
1 1/2 cups flour
1 tsp. cinnamon
1 tsp. all spice
pinch of salt
1/4 tsp. clove
pinch of cayanne pepper
1 tsp. baking powder
Preheat oven to 350F
1. Cook the lentils with the water, and spices until it's a mushy consistancy.
2. Mix one cup of the cooked lentils with the juice, vanilla and sugar until smooth.
3. Sift the remaining dry ingredients
4. Add the two mixtures nd mix well until no lumps remain.
5. Pour into 9" cake pan and bake about 30 min +/- until tooth pick test comes out clean.
6. Let cool and cut in half.
7. Mix ganache. Mix chocolate chip and a tad of soy milk over low heat until well combined. Add on top of one of the cake halves. Place remaining half on top.
8. Mix some powdered sugar, vanilla extract and cinnamon on low heat until combined. Pour on top of cake.
9. Decorate with powdered sugar.

Next time I will add 1 tsp. baking soda and 1 tsp. apple cider vinegar to make it a bit fluffier.
