Quick question--is homemade seitan supposed to look vaguely like a brain? I made it once but wasn't sure and never used it, and now, whenever I bring up a vegan item with an odd name, my mom asks, "Is that the brain thing you had in the fridge for two weeks?"

if you cook it all in a big glob it can look that way - if that bothers you, try pinching it off into marble sized pieces before cooking. It ends up being chunks abuot the size of um stew meat.

I've found that if you sort of rub off the brainey chunks while washing the starch out it takes on a smoother texture.

Agreed, that is pretty normal after washing. When I cook it I tear off chunks the size of billiard balls and wrap them somewhat loosely with cheesecloth. Then I poach/simmer it for about 1 to 1.5hrs.
