Blueberry Pancakes

Ingredients
  • 1 c. flour
  • 2 T. sugar
  • 1.5 t. baking powder
  • 2 T. baking soda
  • 1/2 c. blueberries
  • 1.25 c. soy milk

Can anything be used in the place of sugar since I don't care for it?

There's only 2 Tbsp of sugar - in that case, I usually just substitute whatever sweetener I'm used to - Agave, Maple syrup, etc.

You might try using maple syrup and reducing the soymilk a bit.

Were they frozen blueberries? I find my blueberry pancakes only stick if my blueberries are frozen - fresh ones don't have that problem for me.

i use a nonstick pan and either cooking spray or (very rarely) vegetable oil and i've never had the sticking problem.

I don't use cooking spray for regular pancakes... but it seems logical that it should work. Try this: Make it without blueberries, add the batter to the pan. Add blueberries to the 2nd side while the 1st side cooks. Then when you lift the pancake to flip it, spray the pan before flipping.

Bring the berries to room temperature. That's actually good advice for any ingredients that might stick.
