Beeets!

I scored a huge bag of organic, homegrown beets tonight.  Whatever shall I do with them?  Borsch does not appeal to me, unless it's really unique and not very borsch-like.  I also have yellow squash, broccoli, carrots, kale, tofu and a whole host of organic grains.

So many beets, so little time!

I love them roasted with olive oil and a bajillion herbs. They're also really good shredded over salads. MMM.

gah, I was going to suggest roasted or shredded over salad but you were already there! Your vegetable mix is making my mouth water - a combination of roasted and steamed vegetables served with grains or cubed tofu and lots of fresh herbs, maybe cilantro, would be simple but tasty.

Did the beets come with the leaves attached? You can make beet rolls with those.

If you have a food processor with a grater attachment, this is what you can do:

peel and shred:
- 1 or 2 raw beets
- 1 or 2 raw carrots
- a bunch of cabbage or kale

mix together. throw in some balsamic vinegar, olive oil, and sesame seeds, and you've got yourself a tasty coleslaw.

Did anyone else watch Doug growing up? I can't see a mention of "beets" without hearing "Killer Tofu" in my head.
