Black Bean and Olive Burgers (soy-free / wheat-free)

I've had a 51 oz. can of olives sitting in the cupboard for a while now (purchased at the local Cash and Carry, of course) so I decided I would make up something that required a lot of olives.


4 cups whole black olives, drained
1 cup cooked black beans, drained
1 cup cooked brown rice
1 cup chickpea flour
1 cup minced onion
1 tsp garlic powder
1 tsp paprika
1 tsp cumin
  1. Place the olives in a food processor and pulse until coarsely chopped.
  2. Put the remaining ingredients in the food processor and blend briefly until just combined.
  3. Form mixture into patties and fry in a lightly oiled pan on medium-low heat until brown on both sides.
