Ingredients 2 avocados 1 small onion, finely chopped 1 clove garlic, minced 1 ripe tomato, chopped 1 lime, juiced salt and pepper to taste
Directions
1 Peel and mash avocados in a medium serving bowl. Stir in onion, garlic, tomato, lime juice, salt and pepper. Season with remaining lime juice and salt and pepper to taste. Chill for half an hour to blend flavors.
and
6 cups assorted chopped or sliced fresh fruit, (berries, grapes, mango and/or kiwifruit) 2 limes, juiced 1 tsp Raw Sugar to taste Almond,Walnuts, and Raisins
I made the Avocado thingy, and used spring onion instead of regular onion (perhaps you call them scallions over there? Or salad onions? Little things with green stems/leaves/whatever!). To go with it I finely grated a load of mixed nuts and seeds together, then added a tiny amount of grated garlic, and a small stem of celery, grated, mixed it all up with some tahini and a little lemon juice.
I'm going to continue this raw food thing into the week, so tomorrow morning I guess I'm going to be preparing some stuff with the dates and dried apricots and nuts and stuff to take to work for an energy-filled snack! With fresh fruit, of course!
I now also have in stock: Cashew nuts broccoli lettuce celery fresh coconut dried dates dried apricots baby-leaf spinach grapes peanut butter (crunchy)
these granola bars i made today...they are yummy..but yummier before baked...so thats raw...
1 cup barley malt/brown rice syrup/maple syrup (honey if you dont care about that...) 2/3 cup peanut butter 2 2/3 cup rolled oats 1 cup WW flour 1/3 wheat germ 1/2 TS. cinn. 1/4 ts. cloves 1/4 ts. nutmeg 1 1/2 cup raisins/dates/other dried fruit 1/2 cup dried coconut (optional)

hi - i've tried this a few times (hope the measurements are o.k., i'm posting from the u.k) 350g carrots, scraped then coarsely grated 50g raisins 2 ripe avocados 4 tablespoons lemon juice mix together carrot, raisins and half of lemon juice. peel and dice the avocado; sprinkle with the rest of the lemon and add to the carrot mix. season with sea salt (if you like) and spoon on to plate. dressing (optional, i've eaten it without and its fine) 2 tablespoons of egg free mayo, 4 tablespoons of v. yoghurt, 1 teaspoon fresh ginger root, - mix these all together then spoon over the salad. you can sprinkle toasted almonds on top to finish it off for texture if you like hope you enjoy it!

Against the odds, I also am NOT AMERICAN! :-) I love ginger, and bought some fresh from the local shop just yesterday, but I rarely have mayo and yoghurt in, although I suppose I could go and buy it. Cheers anyway, will give it a go!

Well, I think you'd have been better not using grams if I was American cos I don't think they use metric over there, it being a European thing! What they do use is cups, I think one cup equals about 230ml, but I'm not entirely sure.

The fruit salad is the sort of thing I would have made anyway, but I'll certainly try that avocado thing!
