herb (or not) herb biscuits
(preheat oven to 400--grease a large baking sheet)
2 cups+ spelt flour (can use whole wheat)
2 1/2 tsp baking powder
1 tsp salt
1/4 cup margarine
1 cup almond, rice or soy milk
1/4 cup chopped fresh herbs (i used basil...can do chives, parsley, oregano)
in a mixing bowl combine flour, baking powder and salt. blend the margarine into the flour mixture until resembles a coarse meal. mix the milk into the flour until moist. gently knead the dough for about 30 seconds. if too sticky add more flour. blend in the herbs.
scoop dough into round balls into baking sheet about 2" apart. bake for about 12 minutes or til crusts are light brown.
mine made about 18 small biscuits. next time i will make them a lot bigger. i used them to make "breakfast biscuits" with follow your heart cheddar cheese, soysage, fried tofu and avocado... YUM.... these biscuits would also be perfect for biscuits and gravy.
they were really good, easy to make and hardly took any time at all.
