hey i'm kati. most of you probably don't know me but i go to shows when i can get there and attend other things when i can. i wanted to share with you the recipie i used for dinner tonight becuase it was really really good. Its kind of time consuming, but well well worth it. i hope to get to know you all better and learn more about my and your veganism. ahh sorry. that sounds so cheesy.
Creamy curried veggies
1 large onion, sliced
2-6 cloves of garlic, minced
1-3 large carrots, diced
2 tablespoons olive oil
1 medium potato, cubed
1 tablespoon curry powder
1/2 teaspoon cumin
1/2 teaspoon turmeric
pinch of cayenne pepper
1 cup soy milk
1 cup peas
3 tablespoons soy sauce
plus any other veggies you wanna throw in (cauliflower, brocolli, mushrooms, spinach whateva.....)
In a large saucepan, saute the onions, galic and carrots in the oil on meduim-high heat until the onions become translucent (a few minutes). Add the other veggies, curry, cumin, turmeric, and cayenne, stirring often (so it doesn't stick). cook 2-4 minutes. Add milk, cover, and reduce heat to medium low. Let it simmer for 10-20 minutes or until the potatos are cooked (can be pierced easily with a fork). Sir in soy sauce and cook uncovered on meduim-high heat stirring constantly until the liquid has thickened. Serve it over rice!! serves 2-4
