"Hmm..." you might say. "More tofu scramble?"
Wellll... this isn't just any ol' tofu scramble. This is a mad crazy creation of mine that actually turned out to be really darn good, even if the bizarrely close-up photo might suggest otherwise. The "sweet" was a last minute addition when I realized what I had wasn't quite there yet in terms of flavor, so in went some agave and salt. Great combo, strangely enough.
(Measurements rather imprecise here because I was adding and adjusting as I went along..so this is my best guess. Taste and adjust!)
Sweet Chili Lime Tofu Scramble
1 block extra firm tofu
2-3 Tbsp lime juice
1-2 Tbsp chili powder (not the hot stuff, just normal chili powder)
1/2 tsp chipotle powder (this has some kick, so easy does it..)
2 tsp. creole seasoning (I love the flavor of this stuff, though it's difficult to taste unless you add a LOT of it...maybe I need a fresh bottle)
1-2 Tbsp. nutritional yeast
salt
one large drizzle agave nectar
Cube up the tofu; toss it in a skillet with a dash of oil and the lime juice. Saute for awhile--the tofu will take longer to brown up because there's more liquid in the pan with the lime juice, and you don't really need to get it brown before you start adding spices. So, before all of the liquid is gone, add the chili powder, chipotle powder, and creole seasoning. Stir to coat and NOW let the rest of the liquid cook off. Watch so it doesn't burn, and try to brown up the tofu a bit. Add the nutritional yeast and stir to coat; add the salt and agave, and stir again.
Eat up! Yummy yum. I ate it plain, but then again I was hungry and in a hurry. You could probably pair it with something to end up with a more wholesome meal.
