This is the taco dip that my former vegan roommate Melissa and I used to make to accompany our margaritas. It's super easy, but crazy fattening... but still surprisingly tasty. I hadn't made it in forever and I thought it might be a good New Year's Eve treat.
Annette & Melissa's Lazy Taco Dip
1 container of Tofutti vegan cream cheese (nonhydrogenated if possible)
half a packet of taco seasoning (Kroger brand low sodium doesn't have MSG)
1 can drained black beans
1 tomato
lettuce, if desired
anything else taco-y
Mix the tofutti cream cheese with the taco seasoning. Spread in the bottom of a pie dish. Pour on the black beans; sprinkle on the tomato. Eat with chips.
