When I lived with another vegan in Indiana, she used to make burritos with a filling kind of like this. I think I successfully recreated it here, although the sauce I used tonight was a bit too salty.
Tofu Enchiladas
1 small onion, diced
2 cloves garlic, minced
1 Tbsp. olive oil
1 block firm tofu, diced
1/2 Tbsp. chili powder
1 tsp. cumin
6-8 tortillas
1 15oz can refried beans
1 very large dash soy sauce
large spoon of nutritional yeast
1/2 tsp. onion powder
enchilada sauce
Saute the garlic and onion in oil until translucent. Then add chili powder and cumin. After a couple minutes, add the tofu; mash it up a little. Add the soy sauce, nutritional yeast, and onion powder. Cook an additional 8 minutes or so.
Spray a 9x13 pan with oil; in each tortilla, put equal amounts of the tofu mix and refried beans. Roll and pour on enchilada sauce. Bake 15 mins at 350.
This is one of those times the photos are actually so bad that I'm going to withhold them; seriously, you don't want to see these. BUT...they were tasty. Just...very brown and lumpy. Next time I would use green enchilada sauce, if only for aesthetics.
