Lentil Tacos

I  saw these lentil tacos and couldn't resist making them.  For the lentil filling I reverted to the original recipe that person posted:
  • 1 cup finely chopped onion
  • 1 garlic clove, minced
  • 1 teaspoon canola oil
  • 1 cup dried red lentils, rinsed
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 2 1/2 cups veg broth
Saute the onion and garlic; mix in the lentils and spices.  Then add the broth and let simmer, covered, for about 25 mins.

Then I made brown rice and when it was finished cooking I mixed in some lime juice.  I really liked rice on tacos; haven't done that before.

Served with salsa and fresh cilantro.  Yummy yum.  I ate four.
