Once again! Tried another recipe/experiment tonight. I browsed through allrecipes.com for inspiration, then went and did my own thing in the kitchen. I purchased broccoli from Costco last week and still had some left, so I used it here.
Chicken and Broccoli Casserole
1 1/2 cups diced, cooked chicken (I boiled mine)
3-4 cups steamed fresh broccoli
1 can cream of mushroom soup
4 oz sour cream
3/4 cup milk
1 tsp black pepper
1 tsp kosher salt
1 1/2-2 cups grated sharp cheddar
1/2 cup panko crumbs (you can also use cornflake crumbs or bread crumbs)
Spray oil
Preheat oven to 350
Cut broccoli into small pieces. Combine broccoli, chicken, cream of mushroom soup, sour cream, milk, pepper and salt. Stir until fully combined. Gradually fold in cheese until mixed well. Pour into a deep, 8x8 baking dish. Top with panko crumbs. Spray crumbs lightly with spray oil. Cook in oven until the casserole is bubbling around the sides.
Serves 4
Notes: You can use more or less panko crumbs. I'm not huge on big, crunchy crusts for things, so I was fairly minimal. Also, instead of spray oil (this is a shortcut I use when I'm lazy) you can also prepare the panko crumbs a bit more by doing this: Melt 1 Tbsp. butter in a small fry pan. Add panko crumbs and stir until lightly brown, then top the casserole with them. It's not hard, but like I said, lazy me!
I think this would be a lot nicer in winter. Summer is a bit hot for casserole, but with all the broccoli it isn't nearly as heavy as it could be. Enjoy!
