Recipe for Plums

I've looked, can't find a recipe I like so I'm appealing to all of you...

A simple recipe that uses plums. I've got almost 4 lbs and need to use them soon. Yes we can eat them like they are but I'd like to find another way to use more of them sooner.

The Plum Butter sounds really good, so does the Plum Brandy but I don't want to wait a year lol.

I used to make a quick applesauce using the microwave - basically apples and sugar, brown sugar and maybe cinnamon (it's been a year I can't remember that far back)... do you think a plum sauce using the same method might work? if I can remember the method that is lol

BTW - looks like we're not going to Coronation tomorrow. The cost of gas is just too much for us right now and we just got back from a couple of trips down the mountain this week and we have to go back down two more times next week. Both Eb and I were hoping to see you this weekend.

Here is a recipe for Plum Cake:

1/4 lb butter
1/3 cup sugar
1/2 tsp vanilla
1 egg
1 tbsp sour cream
1 pinch salt (only if you use unsalted butter)
1 tsp lemons, rind of
1 3/4 cups flour
1 tsp baking powder
2 cups plums, pitted and sliced into thin wedges

For the topping
6 tbs butter
3/4 cup flour
1/3 cup sugar
1/2 tsp cinnamon

In a large bowl, cream the butter, add the sugar, vanilla, egg, lemon peel, sour cream and salt (if needed).
Mix the flour and baking powder and add that into the mixture.
Grease the base of a round baking pan and spread the dough over the pan. Liberally spread plums over the dough.
To make the optional topping, cream the butter, add flour, sugar and cinnamon. Sprinkle over the plums and bake for 30-45 minutes in the middle rack at 375 F.

Serve with lots of freshly-made whipped cream.
If you like, you may also sprinkle rum or cinnamon over the fruit before baking.

I make homemade jelly/jam every breakfast to saves pace in my fridge. I hate all the jars in there!! So, I just make batches for the day - and they're usually gone by after dinner anyway.

Plums are easy to make jelly/jam with because of their consistency.

Just cut up the plumbs into pieces, add a touch of water, and sugar to taste and cook down for about twenty minutes. Stir occasionally and watch to keep it from burning.

We don't like ours too sweet, but it's always up to the maker! This goes on breads, on pancakes, in sugar cookies as thumb prints..and so on.

Don't forget:

Plum Cobbler, just use plums instead of apples or peaches.

Plum Sauce, like applesauce, but use plums.

Plum Bread, just like Zucchini or Banana bread, but it's plums!

Also, slice them for salads, use them on ice cream, put them in jello, and in salsa!!!! In salsa, they add a bit of sweet to the hot. Yum.

I thought about using them in a plum cobbler, though by now these plums are just not as good anymore and we'll be throwing them away. Yeah, I'm lazy!
