Dorset Apple Cake

Dorset apple cake is a traditional cake from the South of England with a crunchy topping and lightly spiced apple sponge. Serve with hot custard or a dollop of clotted cream.
MAKES:10 - 12
225 g soft unsalted butter, plus extra for greasing (we used Kerrygold Irish Butter)
100 g light brown soft sugar
125 g caster sugar
Zest 1 lemon
3 large eggs at room temperature
225 g self-raising flour
2 tsp. baking powder
2 tsp. ground cinnamon
450 g Bramley or Granny Smith apples, peeled, cored, and cut into 1cm chunks
2 tbsp. demerara sugar
Pre-heat the oven to 180°C (160° Fan). Grease and line the base and sides of a 23cm round springform cake tin.
In a large mixing bowl, beat the butter, both sugars and lemon zest with a handheld electric mixer or freestanding mixer until light and fluffy, 3-4 minutes. Add the eggs one at a time until well combined. Fold the flour, baking powder, and cinnamon through the mixture until well combined. Stir through the apple chunks until evenly distributed.
Transfer the mixture to the prepared tin and smooth the top to level it then scatter over the demerara sugar. Bake in the middle of the oven for 50 minutes - 1 hour until the top has formed a crusty layer and a skewer inserted into the middle comes out clean. Leave to cool in the tin slightly before removing. Serve warm or at room temperature with either custard or clotted cream.
