Molasses Granola Bars
Yields 16 Bars

1 1/2 cups old-fashioned rolled oats
1/2 cup unsweetened coconut flakes
1/3 cup unsweetened dried cherries, chopped
1/3 cup pumpkin seeds
1/4 cup sesame seeds
1 tsp ground cinnamon
1/4 tsp fine sea salt
1/2 cup tahini (or peanut butter) - remember look for one with no added ingredients
3 tbsp virgin coconut oil, melted
1/3 cup blackstrap molasses
1 tsp vanilla

Preheat the over to 350 degrees. Line an 8 x 8 inch baking dish with parchment paper. In a large bowl mix together the oats, coconut, cherries, pumpkin seeds, sesame seeds,cinnamon, and salt. Add the tahini or peanut butter, melted coconut oil, molasses, and vanilla and stir to combine. Spoon into the baking dish and use a metal spatula to press down firmly into a compact, even layer. Bake in the center of the oven for 25 to 30 minutes or until the top is firm and slightly darker. Remove from the oven and let cool completely. Once cool, use the parchment paper to lift out and transfer to a cutting board. Use a sharp knife to cut into 16 bars.

You can wrap these individually and store them in the refrigerator for a grab-n-go snack.
