Addy's Hoppin' John- a good luck dish for New Year's Day
You will need:
6 slices of bacon
2 cups of water
1 cup of rice
16 oz frozen black-eyed peas
1 tsp of salt
1/4 tsp pepper
Put a frying pan on medium-high heat.
Cook bacon until the edges curl, turn over with tongs. Cook until golden brown and crisp, turning often.
Drain on a paper towel and leave the grease in the pan.
Add water to a 3-quart pan and turn heat to high.
When water boils, add peas and rice. Stir well.
Add salt, pepper, and 2 Tbsp of bacon grease.
Bring water to a boil, then turn the heat down to low.
Cover and cook for 20-25 minutes, or until peas and rice are tender. Note: the water should be absorbed into the mixture.
Crumble bacon and stir in.
Makes 6 servings
