Spinach Salad
10oz frozen chopped spinach box
1 garlic clove
1 whole dried chile
1/4 cup chopped walnuts (or pine nuts if you feel like $)
1/4 cup golden raisins
2 tsp tahini
1 lemon
2T evoo
2 tsp evoo
salt
pepper
Defrost spinach, wring dry.
Vinaigrette - tahini, lemon juice, salt, pepper, 2 tsp oil. Set aside.
Heat 2T oil in pan. Cut garlic into thirds, add to pan. Break chile into pieces, add to pan. Wash hands.
Add nuts, raisins, and spinach to pan. Taste for seasoning. Finish with lemon zest.
