One of my favorites. I can attest to the healing properties with regard to treating poison ivy. Best part is, unlike IvyDry, jewelweed treats the itch without turning your skin into a tight, lizard-like surface.

I learned to eat the seed from a guy at a roadside stand once...can't quite remember where but it must have been VA or NC, anyway in the mountains. We stopped to look at stuff, started talking with him and I was showing my kids the exploding seed heads. He said to taste them, they tasted like walnuts. So I did. LOL. LATER I confirmed in with some googling.
