Dice and cook 4 strips of bacon. Set bacon aside and cook a diced onion in the fat. Add 1 tsp cumin and 1/2 tsp paprika. Add 1 lg bag frozen corn (could use canned or fresh) and 4 cups chicken broth. Use an immersion blender to blend about half the soup, but leave plenty of corn unblended. Add 1 can petite diced tomatoes, 2 cups cooked rotisserie chicken, and 1 cup half and half or cream. Add bacon back and simmer until slightly thickened.
Beef- I made this up today and made it ahead. It is literally the best thing I have ever tasted.
Cut 1 large white onion into thick slices and saute until translucent. Remove onions and set aside. Cut a chuck roast into 1 inch pieces. Salt and pepper them and sear them in oil over high heat. Add 2 Tbs. tomato paste, 1 tsp. worcestershire sauce, 3 cloves minced garlic, and cook a minute. Pour an entire bottle of beer over it and a little water, just to cover. I used Yeungling, which is like standard Philadelphia decent beer. It's a lager. Then I popped the whole thing in oven at 300 for about 3 hours. It was freaking amazing.

I make a similar chowder but mine calls for marinating chicken in Liquid Smoke for about 30 minutes before cooking it. It adds a great flavor.
