Well, I hope the trip to South Africa works out for you. I was there on business last year and only had one day to do tourist things. (The rest of the trip was two weeks where I saw only my hotel and the radiology department at Pretoria Academic Hospital).
Have you tried Picasa for post-processing photos? It's a free download from Google. It presents all of your pictures to you in a scrolling album of thumbnails. All your pictures - with headers showing where one folder stops and the next one begins. It has a number of simple,effective processing tools: rotate, crop, auto adjust color, auto adjust contrast, which I find handle most of my needs. It also has more detailed, manual adjustments if you need them. Best of all, while it remembers and displays the changes you make, it preserves the original image so you can back out your edits if you change your mind. It will email pictures, produce web pages, and a bunch of other stuff.
I used to use Photoshop for all that, but I found the workflow to be cumbersome. Now I do most everything with Picasa and only pull out Photoshop for the tough ones, or for "money" pictures where it has to be just perfect.
