I'm not much of a sweets baker.

But - lately I've been trying to change that. I'm not sure why - but I like the combination of high heat and sugar. Makes me smile.

I've been working on cupcakes - after the disaster that was my attempt at a bday cake - I thought I'd scale it down a bit. Anyway, what isn't there to love about mini frosting holders?

I've finally worked out a base that I'm really happy with. It's light and fluffy and no matter what 'flavoring' I put in it, it's not overwhelming. The base is so stolen from the chef dudes at Hot Knives. It's so versatile that I'm sure it's their go to base as well.

So I've got a batch of almond cupcakes all ready to go, as I'm going public with my efforts tonight. But there's a problem.

Frosting.

I haven't been able to make that work yet. I've got frosting, but it's runny and not very creamy.

I think the problem is that when it says to whip the frosting 'till it can't be whipped anymore, that doesn't mean to stop when my arm is tired. My arm is very tired and I still have runny frosting.

Maybe I'll inject it into the cupcakes? Or serve up shot glasses of frosting with the cupcakes as a chaser?

Whatever - no frosting is going on top of the cupcakes.
