The good thing about not being able to fall asleep until 5am and waking up at noon is that I can make myself a wonderful breakfast/brunch/lunch meal.
Today I made waffles and tofu bacon.
I've always loved waffles, but have never been very adept at making them.
But the recipe from Hannah of
Bittersweet fame looked so easy that I just had to try it.
The first one came out over-cooked - I'm never sure how to tell when the waffles are done. Even so it was tasty with a little EB and maple syrup. I slightly undercooked the last three batches - but that's ok as I'm going to freeze them for future use. The waffles will fit nicely into my toaster.
I also decided to make some tofu bacon. I had a third of a block of extra firm that had been frozen and thawed.
I sliced the block into thin slices (I got 5) and pressed as much moisture out as possible.
I put enough veg oil in a pan to cover the bottom and then drizzled a little sesame oil in for flavor. Before putting the tofu in the pan, I put in a teaspoon of liquid smoke and swished it around. I then fried the tofu until it was golden brown on both sides. Finally I added about a tablespoon of soy sauce, tossing to coat both sides and frying some more.
Final verdict? It actually tasted pretty good and the texture wasn't too bad - but it was a bit too oily for me. If I had a non-stick pan, I could greatly reduce the amount of oil, but since I don't, I think I'll experiment with baking or broiling the tofu.
End note: V-8 juice is much more palatable with vodka in it.
