If anybody has a good recipe for cranberry nut bread that does not involve orange juice, I'm looking for such a creature. I might end up just substituting milk and praying, but I figured asking couldn't hurt, might help. Artificial orange flavoring or scent gives my sister a migraine, to the point where she has trouble facing anything that's got oranges in at all, and I'd hate to cause her to make the bad face! Actually, she loves orange juice, but she said yesterday that it's reached the point where she's having the same reaction to real citrus as well as artificial citrus, so. It's just as well I waited.
edit: Thank you for all of the excellent suggestions! Have now
found a recipe which does not involve juice, and I think that will work out for us. I suspect I will try pineapple juice to replace orange juice at a later date. Additionally, I can toss this sucker into my bread machine and let it do all of the kneading and the like before I bake it in loaf pans.
