Finally! A scone that worked for me. Really, it's a lot more like a sweet biscuit than anything else. I kind of cobbled it together from stuff I had on hand, so...
Random basic scone recipe
Ingredients- 1¾ cup all-purpose flour
- 4 tsp baking powder
- 5 Tblsp. butter
- 6 Tblsp. sugar
- ⅔ cup whole milk
- ½ cup any given thing you want to toss in (dried fruit, chocolate chips, diced pecans
Directions
Mix dry ingredients. Cut in butter. Make a sort of well in the middle to pour in the milk and mix it in lightly until all ingredients are mixed. Toss in your fruit/chocolate/nuts and stir those in, folding enough so that they're all well-mixed. The original recipe called for rolling out the dough; I just dolloped big spoonfuls onto the pan and sort of flattened it out a little to about half an inch thick. Let it rise for ten or fifteen minutes while the oven pre-heats to 400ºF. Pop them in for 10-15 minutes of bake time, then take them out to cool on racks. YEY! Done.
Also, I have some other random fun recipes I got my hands on and might try sometime soon....
Fire Crackers
Ingredients- 1½ boxes saltine crackers (6 sleeves)
- 2 cups canola oil
- 2 packages dry Ranch Dressing mix
- 1½ Tblspns. Crushed Red Pepper
- 1½ Tblspns. Cayenne Pepper
- 1½ tsps Garlic Powder
Directions
In a bowl, mix oil, Ranch dressing, crushed red pepper, cayenne pepper and garlic powder. Place crackers in large container with lid. Crackers should be upright, lying on thin side, not flat in container. Pour mixture over crackers and seal container. Turn container over every 15 minutes for the first hour. (I'm assuming that they would be edible after this, as there are no further instructions ~_^)
Graham Cracker Nut Bites
Ingredients- 1 cup brown sugar (light or dark)
- 1½ cups chopped nuts of choice
- 2 sticks butter
- 12 graham crackers
Directions
Grease sided cookie sheet. Put sugar, butter and nuts in saucepan. Boil mixture four minutes. Pour mixture over graham crackers in pan. Bake in pre-heated 400ºF oven until bubbly (about five minutes). More graham crackers can be used, depending on the size of the pan. When the mixture is cooled, cut into bite sized portions.
