So, I finded a recipe online this morning and, having the ingredients to hand, I figured I'd try them out while baking cupcakes for C's birthday tonight.
Ingredients- 2 cups Bisquick
- ½ cup chocolate chips (I used milk chocolate, because that's what I had, but whatever floats your boat would work, too)
- ⅓ cup sugar
- ⅔ cup milk
- 2 tablespoons oil
- 1 egg
- 1 cup raspberries
Directions
Reserving berries, mix all ingredients until good and moist. Fold in raspberries, drop into muffin tins or cups, bake at 400ºF for 15-20 minutes. If the tops aren't as brown as you'd like, turn the broiler on for a minute and that should do it. Remove from muffin tin and cool for 5 minutes. You can make a raspberry glaze if that makes you happy or just sift powdered sugar over them.
Yey for yummy muffins!
