How do I know the pig for tomorrow is fresh? Here's the conversation I just had at Blood Farm:

I find smell to be the most evocative of the senses. Freshly gutted mammals have a very unique aroma: not bad, but something that tickles far parts of the brain, wrapping death and food together in a very visceral way.

If you buy a whole pig, there's none of that. They get hosed out completely after gutting and cleaning. They just smell like raw pork.

Here's a photo of the Midsommar pig just coming off the coals.
