Robert's birthday was this week and as a suprise I made one of his favorites - eggplant parmesan.

- Eggplant Parmesan!
When we were kids my great grandmother used to call it "mulnyam" but thanks to this now being some racial slur I can no longer use that term safely. Whatever it's called, it's damn good! I actually had enough fried eggplant to fill two dishes, but that won't last long.
I made it first for him years ago when I first joined him and Albert. Both of them had never had eggplant, let alone smothered in sauce and cheese so they turned up their noses at first - then they tried it! :-) They've now both been assimilated into the paisano collective.
